You're freaking out over nothing. IMO the whole "you MUST use a neutral pH cleaner" is nothing more than marketing ploy to get people to buy products, or a fabricator who wants not even the slighest blame for anything that could go wrong, so he just repeats the sphiel.

Nothing is going to hit a pH of 7 on the dot, even "pH neutral" cleaners have a range. Just don't use anything too strongly acidic or basic. But regular dish soap is perfectly fine. I have granite and use my own mix of rubbing alcohol and water fragranced with a bit of essential oil. If I've got more of a mess or grease than that sort of quick wipe-down calls for, I'll use either dish soap or diluted Simple Green.

dish soap is fine, I also use Mrs Meyers spray cleaner from time to time. Weiman granite and quartz cleaner is also great to polish them up
