My GE Profile range has been perfect for the 20 years duration thus far. I checked it a few months ago with a typical analog-gauge thermometer, spot-on to the 375°F setpoint at the time.

dadoes, all my 20+ year old appliances were better than anything I’ve bought in the last few years. To compare with today’s appliances, it’s like comparing apples to oranges. 😕

Of course. That makes any and all responses anecdotal and of no relevance, unless the appliance of reference is the exact same model and age as the unit of question, which the OP didn't specifically state on either point.

I have a Miele 24" Convection/Steam oven XXL that heats up quickly and maintains its temperature.

My 36" Wolf Induction range hasn't been used very often, but I cooked some casseroles last week and they should have been hotter when they came out. I need to run that oven with a thermometer inside to verify the temperature. It might also be that the casseroles came out of the fridge and I should have raised the temperature and cooked them longer!

Thanks @chispa I have been thinking about a steam oven in my reno too. I understand that temperature varies by 30 degrees each way, but 100 degrees makes cooking chicken a challenge
