There's nothing wrong with using 3cm behind a range. That's what is done with all the full height slab pictures you see. You just have to plan for the correct cabinet depth below, and that may mean bumping it out by a 2x4 ledger on the wall.

Solid surfaces at that 3 cm are used as backsplash all the time, and the effect on perimeter counter and cabinetry is a non ISSUE.

Another approach is to remove the drywall behind the slab and adhere the slab directly to the studs. Then, if tiling the back splash on each side of the slab, the combined depth of the drywall plus tile leaves only a very slight slab protrusion.
