I have no idea what the cost or construction needs would be. But ceiling-mounted seems clearly better, if feasible. Having the vertical poles interrupt counter space would be annoying, and visually it's cluttered and busy.

I do have bottles adn bottles but they all dont have to live on the shelf. Drawers under the counter provide plenty storage and I have a back closet. I am all about aesthetics so whatever looks the best I will go for it.

You have low ceilings, so I wouldn't do anything the full width. I think it would just add to that. Maybe do one set on each side. My mock up skills are not great - but something like this?

Of course you would need to confirm with a glass shop about how wide you can go with the glass shelves and proper support. That is also where I would start to see if they know someone or someplace to get the metal work.
