Hang a rod at the ceiling and stop it when it hits the bulkhead. Add another small rod right up under the bulkhead.

Or:

Using the rod at the ceiling, stopping the rod when it hits the bulkhead, use two panels and during the day keep them pushed back filling the wall where the mirror is now. When you hang the panels for the dining room window, make sure you use a rod at the ceiling.

If you mean the narrow window on the right, why not install a nice fabric roman shade in the same fabric as the curtains. If you install curtains on that window, it will block the view as it doesn't look as if the wall on the left is wide enough to accommodate a drapery panel on that side. of the narrow window is very wide. to push the curtains on both sides.

On the large window I suggest you extend the rod beyond the window so that when the curtains are open the window will look wider and let more natural light in the room.

If they are all curtains the hanging system should match. Are they meant to be operable or fixed?

I like the idea to have roman shade in dining room. Not enough room left of that window for curtains to fully open.

I’m not interested in changing the shades since I already have roller shades. The curtains would mainly be decorative but operable

If want add pull backs on ends. I like it as now. If sunlight don't interfere there then none. Shades u have are sleek. Why add more dust for cleaning.

Good decision to use the same style of track for both windows.

Looks great! I would also recommend to remove the tiebacks on the windows on the right side. The curtains will hang better.
