I did go to two lighting showrooms and intended to go back to one of them that I had previously sent house plans to, when my GC upended the schedule. His electrican promised me that he had the perfect project, has done many high-end homes with the sort of fixtures that I described, and he was an expert. I told him to go to one of the lighting showrooms that I visited. He didn't.

I didn't like the crap he showed up with and had to do a real-time "what do we do now" thing. You know, the "my helper and I are here; we need to know now." With them secretly hating you for rejecting their offering. No stress there. My bad for not requiring that I see the product first and not picking everything out specifically myself. Thankfully, the owner of the lighting showroom kicked it into overdrive and is ordering appropriate fixtures.

Next up will be outlets. I have showed the electrican pictures of the outlets that I like, stressed that I want ones that are flush with the drywall/granite backsplash, and even drew location pictures on the wall. Did he install the junction boxes where I wanted? No. I'll have him move them today.

I am thinking LeGrand Adorne for the light switches and outlet receptacles. It is a kitchen, so I need GFCI. What do you all think?

And then all of your lighting would be at an angle, instead of lighting below at the human level. Or the fixture itself will bug out of the ceiling at a zit angle. Or, you get an eyeball at an angle. There's no good choice for lighting, except lamps at floor level.

The Nora fixture suggested would work in general, but proper placement with the kitchen layout is necessary even with the availability of adjustment with that model's position/reflectors, and if they are higher up you may need more than 800lm (so /10 or /HL fixture spec). You will also have to address the housing's void of insulation in the roof plane.
