I had him look at your post. He said, carbon steel pans come pre-seasoned, and have a protective wax coating. Just wash, and start cooking.

Can’t vouch for anything sold at Patel’s. Carbon Steel is not a coating. It shouldn’t come off. Also, carbon steel pans are quite thin. Your pan looks much thicker.
