Remodeling Kitchen Island

So I removed the painted shiplap the previous owner had attached to the kitchen island in hopes of replacing it with reclaimed barn wood. The boards came off no problem, but they had attached it with what looks like a type of mastic (still has trowel marks). I'm looking to see if there is some sort of skim coat to spread over the entire thing to help fill in the grooves and level it out a little bit. I am definitley not attempting to sand it.
