Post measurements, budget, and what a ”remodel” means to you. Some people want to spend 30K on some new appliances and wall paint. Some want to spend 10x that with custom inset cabinets, 50K worth of appliances and exotic quartzite counters.

15x13 kitchen want to go to ceiling with cabinets lots of drawers z line appliances keep chandelier above corner sink . Possibly take out peninsula and wall where cook top is currently and put and island with seating but still have room in kitchen for people to hang out .

@maureenrn62 all appropriate ideas. I think your contractor can help you know what you are dealing with. Have you thought about what removing the wall will mean for your flooring? Do you know if there's anything important in your soffits? Have you identified a good contractor?

You can not, will not, get any useful advice without a fully informed floor plan of the existing space and that which surrounds it.

That means a 2 dimensional, accurate, legible drawing with every last inch of everything noted, Every wall, every opening and where it leads......

You often can NOT simply take what may be a load bearing wall. Are there any mechanicals in the soffits? What would the budget look like?

What about the flooring?! and the wood to which it marries?

I would add to Jan's comment that you will get much better advice with a complete floor plan, and she wants it in inches, not feet. Also, I see a lot of Tuscan detail, so it would be helpful if you described your plan for getting rid of those dated elements in the areas surrounding your kitchen and throughout the house (for continuity).

A to scale floor plan every window, doorway and where those lead clearly marked . Usegraph paper to make it easier then every measurement clearly marked ideally all in inches post here in a comment in jpeg format . That and answers to all the questions already asked will get you some real help. BTW all appliances from one maker is never a good idea. Seems to be a samll space in the new kitchen forget the wall ovens and do a range with proper venting.
