Thoughts on maple cabinet stain?

Working with a cabinet maker and wanted to get thoughts on our maple cabinets. I’ve heard maple is hard to stain and these turned out splotchier in areas than we imagined. But I’m not sure if it’s just because I’m looking too closely.
Is it a rough stain job or looks ok? Anything that can be done once stained and finished?
