Mildew smell coming from ceiling bays

Hello!

We bought a house with a leak in the roof. We’ve re-roofed and have stopped the water, then re-drywalled the walls that had been impacted by the leak. We still have 2 ceiling bays, closest to the effected walls that smell like mildew. We are gutting the kitchen and currently have the ends of the bays exposed and would like to get rid of the odor now but do not know how. I’ve used Bins primer as far in as possible, but this isn’t nearly far enough. I have read very good and very bad things about mold bombs and foggers. Do you have any suggestions? We don’t want to tear out the living room ceiling where the bays go through.

You haven't described properly what can be going on with a 1st floor ceiling in a kitchen, when the roof leak was over a 2nd floor on it's roof. Unless it was a total flood upstairs, damage should have mostly been contained upstairs and in the attic.

If you do not see any mold in the Kitchen ceiling I'm not sure what mold remediation of any type will fix, let alone what Zinsser paint was covering.

When you start opening up walls, smells can come from anywhere, and sometimes they make you think "mold" when it might not be. Could be stack effect pulling stale basement air, cellulose insulation, etc. Just not enough info here.
