No to glossy on a bathroom floor.

My preference of tile size would be 12x24.

large tile would make for less grout lines, but bathrooms are a great space to show some style (less tile/expense) In a space with no natural light source, lighting is critical, I would look to add as much light as possible, layering overhead, sconces at the mirror. a semi flush light that shines up and down to help bounce light around the room.

White walls and ceiling add color with towels, rug, art, keep the space light and clean.

as for a light floor, you are going to clean it no matter what color you choose, pick a tile you'll love looking at. White countertop sounds great... polished chrome for a fresh clean 'shine'.

I would have both compliment each other, not match, but use the same finishes for continuity for a small condo.

There are attractive marble-look tiles that come honed/matte to provide non-slip flooring in bathrooms.

Mine are 24" x 24" matte on the floors. I used the 30" x 30" polished version in the shower.

12x12 or 12x24 for the floor. You could also do 8x9 hexes. They should all be matte. Here's a bath we did with 8 x 9 hexes in a porcelain tile that looks like slate.

I like 12 x24 tile usually porcelain and if you have a tub or shower I prefer the same tile on those walls too. As for the different bathrooms they can have different color schemes no proble usually if attached to a bedroom then that drives the color scheme . If you keep the tiles simple one color porcelain then it allows some freedom with decor down the road
