Cold Weather Cooking

last year
last modified: last year

I'm cooking black beans, pork hocks and onions. Threw in a couple of dried chile arbols for a little spice. What kind of cold weather cooking are you doing?

DH requested Ina G’s Penne Alla Vodka several days ago. I finally have time to make it. Wow, the holidays are gone in a blink!😳

Lucille, I’ve posted this before, but this book I have fits your post title.

Lunch at a small restaurant overlooking a frozen lake, I started with a bowl of chili. Nothing fancy, but really nicely spiced. Got me thinking I really need to perfect a basic chili.

Soups! My favorite being Posole. After that, too many to list, as I love to make soups during our Winter months especially.

Winter around here means ribolitta at least once every fortnight. We also like stews, at least we have in previous winters. Right now even though it is very cold (for us) I have absolutely no desire to eat anything other than salads. I expect it’s fallout from the holidays…..ask me sgain in February 🥶❄️☃️

I've been eating a ton of chicken gumbo soup, not home made. It seems light enough and so soothing after the heavy eating we did during the holidays. Tonight I'm pan frying salmon.

Homemade chicken-rice soup, or homemade vegetable -beef soup!

“Butternut squash soup from the Silver Pallet cookbook.”

Kendrah, Silver Palate has some good soup recipes. I also like their Potato Cheese Soup. They have a pretty killer pot roast, too.

Speaking of pot roast, this is another good one.

KSWL, I decided to make some ribollita. I got the ingredients for this:

    https://cooking.nytimes.com/recipes/1016052-ribollita

I would make the toast separately, use stock instead of water, and I have leftover baby spinach... otherwise plan to follow Bittman's recipe. Any suggestions?

We're having split pea soup with cornbread for supper. It's definitely soup weather!

    “Any suggestions?”

mtnrdredux, the NY Times recipe was blocked out but I agree with using stock and spinach would be a preference for me. Bittman’s a good source. Ina’s Ribollita is also excellent….and her Winter Minestrone.

Is the Silver Palate BNS soup a curried one? The only reference I could find was this one: https://www.silverpalate.com/recipe/store-favorites/curried-squash

It sounds rather sweet. Is it?

DH requested 15 bean soup with the Christmas ham bone from the freezer. That may happen this weekend.

The Silver Palate squash soup is not curried. It is rather sweet. I cut back on the sugar. Chicken broth helps make is savory. I don't even use the repice anymore. I love chopping up any squash or root veggie, tossing it with olive oil and an Italian salt mix (has rosemary, pepper, and thyme in it), a bit of brown sugar, and roasting it on a sheet pan. I then toss it into a pot with an immersion blender and hot chicken stock. Then I adjust the flavor with other spices and let it simmer a bit. As usual, everything tastes better the second day. But who wants to wait to eat soup when it is this could outside?

I would love to include them. And I know they would love to read some of the great recipes and ideas y'all come up with. I tried just now to add them into this thread by using the edit function but could not see them listed in the forums one can cross post to.

Happens to me too, all the time

Well, I cooked a piece of a pork shoulder the other day for pulled pork sandwiches. That doesn't sound like cold weather cooking, more like a summer BBQ dish but I cooked it in the oven in my dutch oven which meant my oven was on for hours, and I feel like that is how I like to cook during cold weather. I do not like my oven to be on for long in warm weather. Does that count?

I used the leftover shredded pork to add to a Brunswick stew for my SO. He loves it. Me, not so much so I divvy it up and freeze it for him to eat as he wants.

I make a very basic but good chili. Served with shredded cheddar and fritos instead of crackers.

I have the makings for veggie beef soup. Again, for SO. I am not a big soup or stew eater. I will eat it, but I don't love it. And my soups taste good, just not big on them.

My SO, funnily, considers things that are seasonally summery to be cold weather food. By that I mean all the spring and summer produce I get and grow, purple hull peas, corn, limas, etc. I cook them in big batches fresh from the garden and freeze them in individual potions. And he only wants them when it is freezing cold outside. When they start to produce in the spring and summer he says "that will be good for the winter." huh? Weirdo. He ate some yesterday in fact. I fried some chicken and baked some cornbread to go with it. I had a salad.

I do love a pot roast and I like to make them in the oven instead of a crock pot or instant pot.

“Is the Silver Palate BNS soup a curried one?“

floral, I took a pic of the recipe in my Silver Palate Cookbook...same as the link you posted. Kendrah, is this the one and you omit the curry? I like a hint of curry and would definitely NOT add 4-5 tsp.

Jerseygirl, we’re having pasta fazool, too, with hot, crusty homemade bread and garlic oil. i made enough for two days. Later this week we will have copycat Olive Garden Zuppa Toscana with salad—and more bread!

Escarole soup with cannellini beans, topped with shaved parmigiana cheese and garlic bread. Yum!

I’m making a turkey dinner on Saturday. Thinking about making italian wedding soup next week. I’ve never made it before.
