Recs for induction-compatible cookware and where to buy

last modified: 6 months ago

Looks like I'm going to have to go pots and pans shopping. Sadly, my beloved old Farberware that I've had since I got married over 30 years ago isn't induction compatible. I don't know where to even start in terms of what brands to look at. I want quality, not interested in bargain-basement jazz you can get at Kohl's or the *-Marts of the world. What recs to do you have for me? And where does one even go nowadays to buy good cookware? I want to be able to see and feel them before I invest.

ETA: Had to create separate posts on different forums because I couldn't link.

All clad and cast iron are my faves. tramotina stainless seems great if all clad pricing is unreasonable. We have combo of grandparents cast iron and new lodge cast iron.

What kind of Faberware do you have? I have had mine for 30 years also. What I have works great on my new induction cook top. All that is required for induction is a flat bottom!

We have Tramontina tri-ply clad pots/pans that work very well and are reasonably priced. Some are made in China and some in Brazil. If it's important to you, read the boxes/descriptions closely. What I've found is that Walmart only sells the ones from China; Amazon sells ones from both China and Brazil.

Also look at the construction, get the tri-ply clad, not the tri-ply base. Heat is conducted more evenly with tri-ply clad. [Clad means the base & sides are tri-ply and heat travels up the sides more evenly; base means only the base is tri-ply.]

If you want non-stick "frying" pans, look at Blue Diamond.

We have All-clad but we also love our 2 pots from Ikea. You can always go to TJMaxx/Homegoods, etc too.

I checked the Farberware with a magnet = no-go. Keep the recs coming, please!

Have both All Clad (primary home) and Tramontina at summer home. All Clad is much heavier for my arthritic hands. Enjoying the Tramontina. You can always order and return if you don't like it.

We purchased a Ninja neverstick saute pan to add to our Green Pan set (from Williams Sonoma). We liked it so much we purchased this set from Costco and gave away the much more expensive Green Pan set.

Made-In and anything cast iron (Lodge is a great combo of price & quality for its frying pans).

I have a set of tri ply Henckel's, that I purchased at Costco that I have been very pleased with, the set which was on sale was $150. I also have All-Clad which are wonderful and clean up beautifully, but are more of an investment. I use the All- Clad on a daily basis for the past 15 years, the Henckel are used in a second home for the past 4 years.

I had to replace a few things when we got induction, and we went All-Clad. Williams Sonoma has a sale on it right now. Do you have an outlet mall near you? That's another good place to get it for less. I've picked up some pieces at HomeGoods and HomeSense; just be sure to carry a magnet around with you while you shop.

On our stove, the pans that have a separate material for the bottom buzz more than the ones that are the same material all around.

All-Clad D3 is the version I'd recommend. D5(5 ply) is less responsive. Sign up for the periodic factory seconds sales. Home - homeandcooksales.com D3 Everyday has a more rounded handle some feel is easier to hold. . .Matfer carbon steel fry pans will work. Matfer Bourgeat Black Carbon Steel Frying Pan | Products | Matfer Bourgeat USA The Ninja set of 8 pans and 4 tops for $200 seems a good value. Ninja NeverStick Professional Hard-Anodized 12-Piece Cookware Set with Stacking Lids | Costco

I second dan1888. All-Clad D3 is great for induction. We got an induction cooktop in our new house, and had planned to get All-Clad D5 bc we've had that for many years (gas stove) and love it. But all the reviews we read said go with D3 for induction bc it's more responsive. You don't need the thicker pans, which work better on gas. We've been really happy with the D3 btw.

Update: I went to Williams-Sonoma this afternoon to see the All-Clad. Holy Moly this stuff is heavy! I could probably deal with that, but I do not like the handles. At all. They are uncomfortable in my hand. There is a Williams-Sonoma brand that is made by Hestan, those were a bit lighter but more importantly the grip was very comfortable.

I see they have a Demeyere set on-line, but none on display at the store. Any comments on Demeyere, particularly the grip?

If you want to see in person, I was going to recommend William Sonoma, Sur la Table and Macys. Also Ikea.

If you think the All Clad is heavy, the Demeyere is much heavier. I have a Demeyere 3 qt pot and a 12" saute pan, and both are VERY heavy.

Update: I went ahead and ordered a Demeyere 10-piece set. Not available in the stores around here, so I had to just take it on faith. I can take it back to Williams-Sonoma if I don't like it. Williams Sonoma had a set on display that might work, it's made by Hestan. It was comfortable in my hand, albeit a bit heavy. But still, if the Demeyere has to be returned, the W.S. might be an option. The All-Clad graphite stuff was lightweight and comfortable, but I can't stomach the price -- the Demeyere is expensive enough...

I have All Clad but also don't like the handles. My favorite is Le Creuset but they are heavy. When I first got induction I had an old set of Revere Ware that I used when I needed an extra pot or pan and since that wasn't going to work I needed to get something relatively inexpensive to replace it. I bought a set of Duxtop on A'zon and ended up liking it better than the All Clad - it has very comfortable handles. Flash forward and I needed induction compatible for a second home. Bought another set of Duxtop and could not be happier.

You did not tell us which line of Demeyere you bought. How do you like your set?

I have some 5-ply Demeyere pans (bought slowly when on sale, as they’re expensive) . Some list it as ”Industry”; I think SLT and WS had different names for the line. I also have one or two of the 7-ply line called Atlantis. And the 3 largest fry-pans, which are all 7-ply; the fry-pan line is called Pro-line. I am very happy with them. They clean easily and well with a dish detergent (like Dawn) and a little soaking. If something is very stubborn, a very small amount of Bar Keeper’s Friend finishes the job.

Zwilling has an annual warehouse tent sale in their Pleasantville, NY location around Thanksgiving and Christmas with huge reductions, including Demeyere. I went in December and got their largest frypan and some Henckel’s santoku knives as gifts. I saw they had a store next to the tent. I was able to find the 2 pots I wanted which they didn’t have in the tent. The pots were at a better price than online, even though more than the general tent prices. I believe they also have this warehouse sale at one or two other locations in the country.

"You did not tell us which line of Demeyere you bought. How do you like your set?"

I got the Industry-5 set and supplemented with a couple additional 5-Plus pieces. So far, so good but one of the 5-Plus pieces has a small defect on the edge of the lid that is very sharp. I already used it so I don't think I can return it, though I might call and see if they can send me a replacement lid or they will accept a return even though I used it (got it from Cutlery & More). The pieces are a lot heavier than my old stuff, I keep banging them on the counter and in the sink because I haven't grown accustomed to the difference yet.

I've only cooked a couple of times with the Demeyere, and I have to say I'm really pleased so far. There don't seem to be any hot spots in pans, stuff is cooking evenly.

I was about ready to crown DH with my new frying pan the other night -- he pan-fried potatoes wedges on the stovetop then finished in the oven and I don't know what he did (or didn't do) but the oil he used got stuck onto my brand-spankin' new pan, all over the bottom and up all the sides. *!&!^@!. Bon Ami didn't make a dent; neither did SOS pads. I resorted to the boiling water-baking soda trick, and even then I had to do two rounds of that and scrub the ever-livin' life out of that pan to get it back to normal. Yea....he was in the doghouse for that....

Call Cutlery & Moore. it should’t matter that you used it; for that price you have a warranty that implies it won’r fall apart in a year - and you have it for far less. I think it’s a lifetime or limited lifetime warranty. if you don’t feel they’re bring helpful, call Demeyere directly (maybe at Zwilling, who owns them in US?) — it is Demeyere’s warranty. I assume you didn’t ’abuse’ it. They may ask you for photos initially.

For baked on oil, try soaking in hot water with dishwashing fluid (like Dawn). use the harder, scrubber side of a sponge. Do not use SOS or Brillo or steel wool, it can scratch. Demeyere might have suggestions. You’re supposed to be able to use it in the oven. Maybe it cooled too much before cleaning. Not sure if Bar Keeper’s Friend would help more than Bon Ami. You can put a little in a relatively dry pan (no water), add a DROP of water to make it into a paste, spread on a small area. i think the can says not to leave it for more than 1 minutes (I think i may have left ir a little more, not much), then try scrubbing just that area with some water. If it improves, keep repeating.

I think it should come clean. I wouldn’t bring up that I used a scouring powder, unless you ask Demeyere if you should and they agree.

    general sesrch:

getting oil off baked on Demeyere

I would try to be careful to ensure they’re talking about Demeyere; there are all qualities of stainlless steel, and you don’t want to experiment on something strange (not sure I can explain what ’strange’ means; hopefully others can help). I have used a small amount of water and vinegar mixed if there is something like a calcium deposit or cloudiness after cleaning; just enough to cover the bottom of the pan, heat or boil (watch because it will evaporate quickly with so little in there), then re-wash to clean out the vinegar; the pan is usually restored to its shiny self.

I called Cutlery & More, and they're shipping out a new lid. No hassle whatsoever. Huge kudos for their customer service!

I got it all spic-and-span that evening. It took two rounds of boiling water with baking soda followed by a good scrubbing that finally got it all off. I doubt DH will ever do that again, at least not with these pans....he knows that guarantees another trip right back to the doghouse...

Sushipup2, i am not sure that Houzz reads each comment that is posted.

They give you the option to flag a comment by clicking on the 3 dots on the right and clicking on

    ”Flag” yourself.

I don’t know what happens after that, but it seems like a stating point to raise an alert.

Perhaps it is telling that there’s almost no info when you click on Jonathan1988’s name: no business name, address, phone number or specialty; the kinds of things the other Pros typically include. (Unfortunately no other Pro has posted on this thread where you can see. Check out the other Pros on any other thread.)

    "One flag does nothing."

I don't think that's true. I've read posts that were posted only a couple minutes before I read them, and when I flagged them they disappeared immediately.

Is it really that big of a deal? Anyone with half a brain is going to ignore spam in a post anyway.
