Can I make my shiny gram ate honed?

I have black granite it is 20 years old can I have it turned into honed granite?

Yes, by replacing it. But don’t choose black again.

Contact local granite/countertop companies. Sometimes resurfacing can be done on installed countertops. Not all companies can do this so you may need to talk to more than one, They will be able to tell you what they offer and estimate a cost for you.

No, you can not. That needs lots of water and diamond brushes, at a fabricators. It would cost more than replacing it. And it might break when being removed, reinstalled, or damage your cabinets.

If you like the dark granite but not the shine, you can save up for honed jet mist (aka VA mist). It's a nice charcoal color with a very muted pattern and a matte finish.
