Why do you want to move the stairs - What does that change get you? Room scale will be super important in this reno, have you talked with an architect?

While you're clearing the floorplan post could you indicate the arch location?

I seems like you are doing the opposite of what most people want. Why would you move the stairs to the center of the house in a one story house plan when they are currently snug up against and outside wall.

Moving stairs is a big and costly proposition. In your case, it seems like in their current position they would be kind of a buffer between the garage and living space, which IMO is nice. If this were my house, my priority would be straightening out the zig zag kitchen. If that triangular space is a chase or something that can't easily move, that could become part of a pantry between a new kitchen wall and the stairway.

Take the money you save from not moving the stairs, and move the kitchen either to the back of the house, leaving the front window for dining area, or move to the kitchen to the front, which will probably entail replacing the window with something shorter to go above a counter. I love my front-facing kitchen. OTOH, I also love the front-facing kitchen table like you have now.
