Lets start with a bigger window that is doable but it affects the exterior of the home so what is that like ? It will be impossible to take cabinets to the ceiling on those peaked walls You could do all the cabinets to the same height as the ones that go to the ceiling on the range wall. The walkway fron island to range looks small but camera angles can really distort . It seems you have a large open space behind the stools can we see the whole space ideally with a to scale floor plan. Do it on graph paper show every window , doorway or opening and every measurement clearly marked post here in jpeg format in a comment. Now all things related to this space dealt with here in comments . A bit of info too as to what you are willing to change like floors for instance

The space btwn the range and island is 42"

The cabinets are fine. I suggest starting with the floor, which is problematic. Try matching it with your lovely LR floor. Live with that for a while before deciding what, if anything, needs to be changed.

Looks like a lovely property! New floors will make a big difference. When you plan for new cabinets, I recommend (as do most others here) drawers for your lowers, with the possible exception of vertical storage for baking sheets.

As mentioned above, a to-scale, 2D overhead floor plan will help others help you get a great and functional layout for new cabinets.

What are your goals for the remodel? Do you want new cabinets for looks, for more storage, a different layout?

Your current layout looks pretty functional, as far as appliance locations.

We recently remodeled a perfectly adequate kitchen, keeping the same footprint. We replaced LVP with hardwood, which goes under the cabinets, so the base cabinets at least had to come out anyway. We added a range hood vent through the ceiling. I made a number of changes to improve storage - like making all the base cabinets drawers, using a smaller sink base, using taller uppers.

The original kitchen was fine, and had we not changed the floors, we probably never would have replaced the cabinets. But since we were making a change, I made sure that the new kitchen made the very best use of the space. Oh, and I was able to repurpose almost every cabinet, and even some of the old countertop, in the garage, in a walk-in closet, and in my workshop, greatly improving those spaces.

You need to draw and measure, All of it.

That means all the existing walls, the window, the height of the wall floor to the vault beginning. All the feet and inches, opening passages etc.

Note that 42" between range and island is BARE minimum and 48" would be a lot more comfortable,.
