Lyn, I am thinking something very similar to what you posted above. I was torn on where to reduce the depth but maybe at the end would make most sense.

The more functional configuration for pantry storage is 11-12 inches deep. This gets you shelf space without losing your ability to see what's been stored. For deeper pantry full height cabinets you have to add pullout drawer units. Those can help up to maybe 5-foot height at a cost for each 24 inches of width of $1500. Plain adjustable height shelves behind doors is way less expensive. Filling some or all of the space with 12" deep pantry storage is a low-cost option. If you extend your existing base and uppers 3 feet the cost would include replacing at least some of the existing counter. A 36" drawer base and a new drawer base for the current end base cabinet is my recommendation. The remaining space as 12" pantry.

Is the budget for custom or stock? Ikea cabinets are 15” deep so you could do two 30” w 15” pantries on the ends with a counter depth counter area in the center, maybe some glass above.

Do 15 " deep wall cabinets witha top a bit deeper . I do that lots in shallow spaces it works fine
