Personally I would do a matching 4" riser and no real backsplash. The open shelving in my opinion does not lend to a real backsplash.

because of the large hood area/ the sloped ceiling and the modern look I'd pick a tile and take it right up to the ceiling. I'm not a fan of this in all situations that I see it...but your space seems right.... the cost of your counter to run it high.....would make me look for the correct tile. It'll be great.

find a tile you like and run it up....i guess the window wall w shelves could be optional

Have you mapped out where your backsplash will go? there are a lot of different “levels” happening - the bottom edge of the upper cabinet, the bottom edge of the open shelf, the bottom edge of the hood - if it were me, I would use butcher paper to see if there is a pleasing tile arrangement for a bs before I chose the material

eta I cross posted with @herbflavor but agree with them - i think the tile would need to go to the ceiling if you do it but the room will need natural stopping points for it

i would not use quartz from a different run than my counter and I don’t think the large veins will translate well

An off white subway tile that matches the white of the cabinets or the wall color would be the classic choice. Consider taking the tile up to the second shelf.

I know this is not a classic choice, but there’s something about your space (or maybe the way I drew in the tile area) but I love the idea of plaid tile for your space. If it’s not your thing, I get that.

It may be too busy for your counter material but your veining is minimal.

There are hundreds of tile colors/patterns that would look good in this kitchen. We all have different opinions and tolerances for how "busy" or "boring" a tile can be. This forum tends to be very color/pattern averse.

Visit all you local independent tile stores and borrow their larger grouted sample boards to bring home and see the tile in your space. Keep doing that till you find something that catches your eye.

A kitchen functions just fine without a backsplash, so no need to rush and settle for something you don't love.

A backsplash protects your walls lower cabinets, floors and sub floor. No need to rush, but absolutely protect your investment.

Quartz is not heat resistant enough to use as a backsplash behind a gas range, so at least that narrows down your choices by one.

Use more of the counter top on the back splash but bring it up to under the bottom open shelf. SS behind the cook top works. You have minimal fussy now don't gum it up with tile designs.

I have stainless subway tiles for my backsplash. I like the look a lot; I don't like cleaning the grout. I have a window just like yours over my sink. Problem is there is so little space a tile and now I have a small area with some tile and it is a royal PITA to clean.If I had to do it again, I would consider sheet stainless.
