I have no context so I need info. Waht is going on are you ripping out that trim tile and the floor ? You have really done this backwards so now the counter drives all the choices I like 12 x24 porcelain tile for both bathroom floors and shower walls , fewer grout lines make for an easier clean. Since the counter is white and gray you will IMO need to probably choose a light gray 12 x24 matching grout that gives you a nice simple backdrop then wall colr can be anything you love and changed easily along with accessories . The vanity could be a nice warm wood for contrast or if going very modern in your style a black vanity , I do need a bit of info as to your style and trying to undestand how the counter was chosen before th vanity.

Show us your shower / tub. You will need to find a floor that bridges your new counter and your shower tub. Once you have the floor selected, you can begin to consider vanity and wall color.

I'd paint the vanity and linen cabinet the same color you choose for the walls.

when you say redoing everything else, does that mean you will remove the tub/shower surround? Or are you merely changing finishes, flooring, vanity color, and wall color. new hardware and light fixtures???
