2 bulky vertical cabinets says "pantry storage" they are not even matching.....remove one... use the inches you make available if you want a real coffee bar or something special.... Look/ honestly...I use particle board storage like that..or rubbermaid, etc, but for the most part in the garage or basement laundry.....some in my sewing area......if this is part of the kitchen and you want a spiffy looking spot at most use one of those...... you dont have lighting...is there an outlet ?...what are you willing to do /or spend for something here?

think of something that inspires you....smaller spots wont break the bank....and you can take liberty w some color/texture etc.

You remove the baseboard when you install built ins. And you add filers at the walls. You use standard size modular cabinets and make up the difference with fillers. That would be 2 24" wide tall cabinets with a 36" cabinet in the middle, and 2 3" fillers to each side. The biggest issue is that someone will need to know how to scribe things to out of level and out of plumb, to begin to do the project.

Can you put the tall pantry cabinets side by side on an adjacent wall?

Do you need base storage for your coffee bar, or just open shelves and a countertop?

You could use brackets attached to the pantry cabinets and cut to fit shelves to span the distance between.

Get a butcher block countertop cut to fit and some heavy duty brackets and mount the countertop at counter or bar height.

If you want a wall to wall built-in unit I suggest you consider Kitchen cabinets. As mentioned by others, Ikea has a nice selection for this use. I few ideas...

A freestanding cabinet can also be interesting between your two walls...
