you don't need to loose the use of the entire drawers, just the sections where the drain and water lines come up.

Have a builder section off the area and use whats left.

If your countertop hasn't been templated, the easiest solution is to buy a new smaller sink, and donate one faucet to Habitat. I've never had trouble sharing a sink with DH. Sharing drawer space, that's what causes tension. Get all the bathroom storage that you can.
