Wainscoting for entryway, but not whole entryway?

I’d like to add some wainscoting (shaker style) in my dining room. My floor plan is very open and dining room opens to middle entryway where staircase is visible. Thinking of adding wainscoting on near staircase wall, as well as up the stairwell, but not the rest of the entry way (as remaining walls are either mostly doors or very small. Would this look odd? Maybe I just do up the stairway? I’m just trying to break up the HUGE two story stairway wall. Also looking for some ideas for dining room in regard to color for tray ceiling to add some drama. Do white trim wainscoting, with color on walls above with same color on tray ceiling? Or paint the wainscoting a unique color and use that on tray ceiling?
