Kitchen quartzite countertop advice

I swear I‘ve read almost every post on here regarding the topic.

I will start with my question. Can anyone recommend a quartzite similar in quality to Taj Mahal that is more grey and not beige?

1. I’ve been to quite a few places and they wont give you a sample unless you purchase the slab. even if I offer to pay. so how do I test the slab, especially when there is a sales rep hovering over me?

2. I was in love with a particular dolomite slab. I put it on hold and luckily it had a small crack in the corner so I convinced her to give me that part since she couldnt sell it. Now I know what staining and etching means. I did the same test with a sample of Taj Mahal that one large supplier did have samples of and I see why everyone loves the Taj Mahal. But I need something in the cooler white grey category, beige doesn’t work.

3. I did find a poplar white quartzite that one place said was very similar to Taj Mahal in durability. I get home and google, and the first thing that comes up is a houzz article about how bad it stains.

My other love is soapstone. It would look amazing. But I have a very small galley kitchen and I am worried it would soak up too much light.
