I would turn one closet into a mudroom type storage + the other side into a panty. if you could put the mudroom out in the garage or at least only use part of the that side for mudroom storage, you have the perfect place to make a walk through pantry.

By removing both closets, you can make the mudroom storage + panty a shallower depth in order to open up the hallway aisle.

Here is where they made a mudroom on the wall instead. Doors will make it more expensive (or difficult to DIY) - you could leave it open and use baskets + hooks instead:

You can always size the shelves as needed. It's a very simple/easy way to add one.

There are many examples of very nice looking walk thru pantries that you could add to one (or both sides) of your hallway.
