If you don't want to use Schluter, look for tiles that have a matching bullnose or pencil trim option. Or you could do the entire wall on your sink wall, with the tile dying into the corners, and a stainless backsplash behind your range. Or, use your countertop material up to the window height on the sink wall, with stainless behind the range.

It looks like you have a clean, contemporary aesthetic. Maybe search for some inspiration pictures that work with that. Do you want to introduce a color, a metallic, or keep it neutral? You could upload your pictures to a site like Tilebar to virtually test out different looks, like the skinny, long tiles below.

Will You have any wall cabinets or not? Either way, what I like to do and do with my client is going to Floor and Decor and get several samples that looked good at the store and bring them home. Best way to find the right match (To my opinion). It is also good to bring with you a cabinet door, piece of the floor and slab (If you have those in samples of course).

You can take your backsplash all the way up to the ceiling, but i think it makes more sense to take it up to the vent hood, then keep that line all the way around the room.

This is the kind of space where you could use sheet glass or solid surface, neither of which would require a Schluter edge. Generally, if you tile higher than eye line you don’t have to even finish the top tile edge, but you could look for tile that has trim pieces. Do you have any inspiration images for your space?

I got my dark blue floor tiles from them for my powder room. They also had dark blue grout. You can go simple with a color like @chicagoans showed you, or interesting shape with a neutral.

Two ideas.

Local independent tile stores will have more unique tiles, that you won't find at big box stores.

They will also have grouted sample boards that you can borrow and take home for a couple of days.
