Leftovers......

Very cold here as the Arctic blast has arrived. I made a comforting early lunch with leftover chili, spread over a frittata and topped with cheddar and baked until hot and the cheese melted, about 40 minutes.

Do you have favorite ideas for leftovers?

    Sounds delish, Lucille. I made a big pot of soup using some leftovers along with a chuck roast. It has beef, potatoes, celery, onion, peas and carrots. I wanted to use up the veggies. It smells heavenly. I also added half a can of tomato paste to the broth.

    I gave my DH thanksgiving leftovers today! Leftover stuffing and gravy, with fresh sliced turkey breast from WF. 🙂

    Lucille, that does sound good.

    Bunny, I agree. I made taco soup Saturday and it’s always better the next day.

    I usually make frito pie with leftover chili. Now I’m craving that, with Ranch Style Beans added. :)

    Other than holiday turkey and ham (and chili), I don’t have many leftover ideas. We usually just reheat them as they are. But I do love having leftovers and almost always make extra for that reason.

    Lots of leftovers either make it into a quesadilla or on a tortilla "pizza." Def add these pizzas to your repertoire.

    We usually eat leftovers in their original form. They don't last long around here. Some things like Chili or spaghetti sauce go into the freezer after couple days as I make a big batch of both and we get tired of it before it's all gone. Always a pleasant surprise to be able to pull something out of the freezer and avoid cooking that night.

    This morning I am having left over Thai Basil Chicken scrambled with eggs. Always look forward to this dish. Our favorite Chinese place has huge portions, my individual order gives me 2 meals plus enough for my egg dish.


    Making turkey chili tonight. I will have to try leftover chili over baked potatoes or as a Frito Pie. In the past, I have served the leftover chili over spaghetti or used the chili to make stuffed peppers.

    I adore leftovers because it has all the flavor of real cooking with no effort.


    As we learn more about alpha gal syndrome, some who suffer from AGS are sensitive to histamines. Not only do many of the Most Delicious foods (cheese, alcohol, smoked fish, tomatoes….) contain histamines but histamines can increase when food is leftover and stored. The recommendation is to freeze it immediately after cooking.

    @mtnrdredux_gw, I’m so glad to see someone else makes Kenji’s bar pizza! I keep tortillas frozen and small blocks of frozen pizza sauce for a quick dinner.


    We have what is called ”mustgo.” That is when all of the leftovers in the fridge must be eaten or must go.

    And of course, Kenji’s bar pizza is endlessly customizable. One of our faves is a white pizza with shredded chicken,BBQ, spinach, and cilantro

    Leftovers have never been an issue for us. Learned years ago teen boys love leftovers and can get very creative with them. We've long been tortilla or pizza bagel fans (slice the bagels into 3rds not half), big pots of soup for pre-planned leftovers. Our clean out the fridge nights are called 'borgishmord' my family's pseudo yiddish sounding version of smorgasbord - a little of this and that.

    Leftovers are the best—they’ve saved me so many calories and money in avoiding takeout. This time of year, soup is the ultimate leftover.

    My leftovers are usually centered around the protein, but I had leftover chipolte peppers that I used in turkey chili, that made for a great spicy omelette the next day. I love eggs so many of my leftovers are mixed in a scramble.

    You have to be of an age, remember Franco American spaghetti? For us in MA, growing up, mothers would brown hamburg, with diced green pepper and diced onion. Mixed in with the Franco American, put in a baking dish, sprinkled with grated parm, (probably Kraft) and baked until bubbly. Delish. Franco American as we knew it, is gone, but Campbell Soup (who owned Franco American) still has Spaghetti Os.

    Soups are my favorite leftovers. Of course mine are so thick, they're almost a stew. Nice comforting one-dish meal. I've used leftover pork, ham, chicken or beef as well as vegetarian. Add a slice of buttered bread...just a little bit of heaven on earth!
