If you could find an unfinished engineered hardwood of the same species and width as the dining room/foyer/stairs, then you could have that intalled everywhere else, and then have the unfinished stained to match what you already have.

If the stairs weren't involved, I would have added to consider just removing what you have from the dining room/foyer, rather than trying to match.

You can do two zones, as long as you don't try to make it look like you tried to match and failed. "Close but not quite" will look worse than a complete contrast.

The reason for using the unfinished is that you can get it finished to match what you already have (and like). Having the same flooring throughout a space tends to make the space seem larger, so that is popular recommendation on Houzz.

If the kitchen/TV room is all you're going to do, you could do some sort of tile/stone treatment in the kitchen. That would definitely give you contrast. Some will tell you that wood in the kitchen is easier on your feet/legs/back. Others worry about drips and overflowing dishwashers ruining wood floors.

I once saw a home that used wider planks in the kitchen. They matched the color perfectly and the transition looked fine and intentional.
