i would tile the entire right wall.... why? basements usually lack perkiness or ? what is the right word? you picked a nice pattern tile with life,....I see no advantage in leaving drywall on the side when you could install the nice tile , alternatively.

bring out onto side wall as shown and down/ maybe around to stair passage trim ........but consider the entire side wall. ..it'll be great contrast to dark floor and dark cabinets.

have you ever had cabinetry/counters that dark in a lower level..... after a while it becomes a dark corner....you will appreciate a bit more of the upbeat tile as to what it does for balancing out the dark .....its a great tile. [I'd put an even brighter tile there .....but anyway the pattern does a lot]

Fireclay Tile - put it everywhere! 😂 It is gorgeous! But alas, you don’t really need to tile the sidewall of a bar. If you want to anyway, tape up some tiles and decide if you want them level with the upper cabinets (my preference) or super old style, level with the lower cabinets. You will need trim pieces or bullnose tile if you want to tile the side wall. Best of luck.
