Small condo kitchen floor plan help

I'm looking for help thinking through options for my small condo kitchen. It is currently a galley with a built-in pantry closet and has 42" tall uppers (see photos). The cut out on the sink side is a coat closet that cannot be removed.

For all options, assume the following: The look will be similar to existing - white shaker + dark counter. Kitchen has tile. The tile is in good shape and neutral. It matches the tile in the condo’s entry (which flows into the guest bath) and you can see both floors from the living areas (which have wood). I am willing to re-do the kitchen floors, but don’t feel a strong need to do so (and can’t at this time re-do the entry floors). Not looking to do drawers, but will add pull-outs to all lower cabinets. Will also be updating lighting. The sink side has the following changes: (1) smaller sink base + a single sink (currently an unusable double sink), (2) the upper and lower cabinets on the left side gain about 6-9" of space.

Option A: Replace 42" uppers with 48" uppers (this appears to be harder to find than it should be, so may not actually be possible). Keep the layout (with the changes to the sink side above). Put a taller door in the pantry and add one shelf to the pantry (replace wire shelves with wood). Gets me some additional space with the taller uppers, more space in the cabinets on the sink side, and one additional pantry shelf. Maybe replace one of the drawers with a two-tier drawer for additional storage.

Option B: remove built in pantry and bring the kitchen around the corner and along that back wall (with either 42 or 48" cabinets) - see rendering. I can't tell if this actually gets me more space, given the lack of a pantry. I'd also have to figure out food storage - I've pretty much always had a pantry. And I would have to find a place for my trash and the spices, etc that currently live on the back of my pantry door. I don't particularly need more counter space. this also necessitates replacing the flooring, which currently matches the flooring in the entryway and I can’t re-do the entryway at this time.

Option C: Same as option B, but add full height pantry cabinet at the right side of the back wall. I think it could only be 18-21" wide, though. This likely nets me more space (but will have to move some pantry things around and find a place for the spices, etc that currently live on the back of my pantry door). But how cramped would that back wall feel (it is appx 71" wide back there).

Would love any and all thoughts.

My other Option D is to just do a mini-lift: add pull outs, replace the double sink with a single sink, put a taller door in the pantry and add one shelf to the pantry (replace wire shelves with wood), and replace the lighting.

Thanks!
