Best option for kitchen flooring, laying it over sheet vinyl

I have an old sheet vinyl floor in my kitchen that I am very tired of! A few contractors told me I can lay vinyl planks right over this. I"m hoping it will last 5 years or so, at which time I hope to do a full kitchen reno. I have been looking at vinyl planks from HD and Lowes, and they have very mixed reviews. I am open to other options, but not looking to pay upwards of $12/sf for this fairly short term project.

I am looking at stone-look, not wood-look, so that somewhat limits my options.

Any experiences/recommendations to share in terms of products that are durable and truly waterproof? I am confident in my contractor's ability to lay it properly.
