Also if you are able to put some kind of stone mulch down it really helps cut back on weeds, at least that’s what we've done.

Ths is my concept.

I would imagine a grape vine covered pergola and blue furniture for a Greek garden. And some kind of moving water. Perhaps based on a lovely big pithos. Shade and relief from the heat would seem paramount. Maybe lemons, figs, jasmine, Bougainvillea and pelargoniums too. Crushed packed gravel maybe rather than stones for ease of walking and placing furniture.
