How do you think you will use it? Coffee bar? Mirror for a vanity set up?

I’d probably lean toward vanity - add a charming mirror and some good lighting, put a terrific upholstered stool where the bev fridge is etc

Fwiw my sister in law covered an awkward sink with a lidded basket she cut the bottom out of - looked great, totally hid/disguised the sink

I do think it's meant to be a beverage station of some sort. I too would have no need of a hotel vibe in my home. It sounds like you don't want to go to the bother of removing plumbing. A vanity area would be lovely there. The present cabinetry tucks into that door oddly. If you decide to gut it and buy a lovely free standing dressing table I would look into redoing that door so that odd hard to reach corner is gone.
