White corn meal?

I always just assumed that white cornmeal is yellow corn meal that has been bleached. I ordered some because I needed cornmeal for underneath my pizzas so they wouldn't stick to the peel and found out that white corn meal is actually made from white corn and supposedly tastes slightly different. It did fine on the peel, has anyone ever baked with it and can you taste the difference between white and yellow?

    Yes, I've tried it. It's a lighter flavor....more of a flat taste. I went back to yellow corn meal for THAT reason...and yes..I use it on my greased pizza pans. I do have a pizza stone & it's not to my liking to use it or a peel. (I donated my peel)

    I use Blue, Red , Yellow and Green corn to mill my own cornmeal and grits and polenta. With eyes closed they all taste the same. The variation in ” corniness” is due to the milling and how fresh they all are . For your purpose there is no difference.


    The Italians use Semolina on the peel and beneath Ciabatta and other breads not cornmeal. But it is such a small amount it doesn’t matter really.

    I normally make cornbread with yellow, but have used white and liked it, too. I think it’s smoother (a bit less gritty), but tastes very similar to me.

    I loooove homemade pizza! What kinds have you been making?

    I've made home made for a while. Some months ago I got an Instant Pot toaster oven and it automatically cooks perfect small pan size pizzas on its pizza setting. But I wanted a larger size so I got the stone and the recent pizzas were thin crust pepperoni.

    I love pizza, I've learned a little on the pizza forums, and with what little techique I've absorbed, I've learned enough to make a very acceptable pizza.

    I find yellow corn to be "cornier" than white and bicolor corn, which tastes sweeter, so it stands to reason that yellow cornmeal would have more flavor.

    I've had white cornmeal and blue cornmeal, and I prefer yellow cornmeal. For making pizza or bread with wetter doughs, I use rice flour underneath. I find it prevents sticking better than wheat, is less gritty than cornmeal and is less expensive and more readily available than semolina.

    PSA I just found out that whole grain as opposed to degerminated flours and meals should be refrigerated as they can go rancid in only 1-3 months.

    I meant homemade when other people make them. 😁

    My late DH’s cousin stayed with us and made one of the best pizzas I’ve ever had. I tried it like hers, wasn’t as good.

    We cheated last night and had an Aldi’s veggie pizza with cauliflower crust. I added more mushrooms, some jarred sun-dried tomatoes, zucchini, and spinach. Oh, and fresh basil and oregano from our garden. It was a bit overloaded. :D

    Aldi's makes good pizza, and it sounds wonderful with all the yummy add ons.
