But where's dinner? ... ... ...

I spent several days cooking (and am thrilled to say so after so many limitations). And when the beloveds weren't here to help out, cleaning the kitchen solo. And cooking. And baking. And cleaning the dishes and pans so I could cook and bake. Some for the holiday (harvest), some for the social group. Lots of sweating because I refuse to have the cooking and a/c in a competition. Fridge full of nice things. But I never did make the shrimp salad for dinner. Last night dinner was cabbage soup from the second container, and a side of the lovely big cold shrimp with ersatz cocktail-ish sauce on the fly. I almost never say this, but it was too hot for soup. It was a lovely holiday (well, ongoing...) and day with the friends, but now I'm supposed to make dinner? I am a great lover of most leftovers, but I don't want to look at any of it just now! Must I make dinner? Would you?

I try to have something already put together or something the hubs can handle without tearing up the whole kitchen!

When I've had a day like that, usually DH will offer to get takeout or cook dinner himself. If he doesn't, I'll just say I'm too tired to cook and we'll just have to scrounge whatever looks good from the fridge.

Same as Colleen for me. DH will make a takeout run, or I’ll find something in the freezer I try to keep on hand for this very reason. This just happened the other night. I had TJ’s Fettucine Alfredo in the freezer and mushrooms in the fridge. I sauteed the mushrooms to add to the pasta, along with some frozen peas. Again, takeout is always an option, too.

I just stocked up on Campbells "Chicken Gumbo Soup". It was on sale for .99cents! "0) Now...if I don't feel like cooking...I can open a can of soup! Hot and delicious! No clean up!

So, what would usually be a quicke on the lfy became dinner. Some bought but high quality chicken ravioli, the end of a jar of bought sausage tomato sauce, bought chicken and garlic sausage and handfuls of baby arugula. Too much sodium and too few fresh vegetables, but not shameful. I'm feeling encouraged, however, by your responses. I've been craving chicken but don't have a chicken. We could acquire barbecue or fried chicken from great local joints, rather than a raw one from the store--I have what to make a nice salad with along with all the leftover veg-- and I could kick the cooking can down the road another day or two....

I had so much funny cooking all that stuff! I do enjoy cooking, but cooking for a party is so much better than cooking dinner. :/
