Apple Recipes for Fall

This email today from Sally’s Baking made me think about some favorite recipes with apples, sweet or savory. For me, it starts with my Apple Crisp, Ina G’s Apple Crostata and her Apple Pie Bars. Got any to share?

I keep pinching myself that we’re headed toward Fall. How did that happen? I even bought some pumpkins at TJ’s today. The checker couldn’t get them to ring up on the register. Typical TJ’s, he just smiled and said, ”Our gift to you today!”

    How do feel about baked apples? My mother made them with dried fruit, and maybe nuts, in the core, cinnamon sticks, butter and booze. Everybody else loved them but me...


    Freeze dried, a favorite of mine, takes an expensive machine, and vigilance to keep them from going soggy, but I've read recipes for apple slices baked on lo in the oven, plain or spiced. Apparently silpats are grippy enough to keep them from curling. This is the kind you slice thin with a mandoline, from top to bottom. It's on my list to try.


    And It turned out my oven is perfect for fruit leather. Just whirr up the apples to an even smooth purée and use a table knife-sized offset spatula (or tool of your choice) to spread it on a silpat on an overturned sheet pan. Bake with fan only at 140°F overnight. Some ovens won't do either 140 or overnight, but check the manual for "Sabbath Mode". That will let you run constantly for up to 3 days at 140 or just below, though the temperature may be pre-set. I kept making mine thicker, but it always turned out quite thin (my error in spreading it)--and delicious! You want it to be firm and tacky, but dry.

    “How do feel about baked apples?”

    My mom made them fairly often. I think she just put a mix of butter, cinnamon and brown sugar in the hollows. Pretty sure she used Rome Beauties. I remember thinking they were okay but not great. I’ve never made baked apples.

    My favorite is a chopped apple sheet cake. With raisins and walnuts and warm fall spices, it's great with a cream cheese frosting (not too much!). I like baked apples too but they have to be the right kind of apple. I make apple crisp all year round so that doesn't count :-))

    This is a fantastic recipe I make for breakfast a few times a year. It calls for one Granny Smith so you won't use up many. I usually add some blueberries at the same time as the egg mixture.

    There are so many good versions of apple cake out there. Smitten Kitchen’s Mom’s Apple Cake is quite good and very large. Apple Sharlotka is wonderful. Have not yet made Transparent Apple Cake but want to. Have not made a Tarte Tatin but hope I could in my carbon steel pan. My bakery did a nice apple tart with a pate brisee crust (shortbread would work if you prefer not to roll out dough) traditional cheesecake filling and thinly sliced apples dusted with cinnamon baked on top.

    Apple Upside down Cake


    Grease pan and add a thickish layer of butter to the base. Strew base with a good layer of brown sugar. Cut apples into eighths and arrange in a pleasing pattern over the brown sugar (remembering that you will be looking at it from the other side when the cake is baked. Set aside while you make the cake batter.

    Make your favourite plain cake batter, adding 2 teaspoons of cinnamon to the flour before mixing in. Add two cups of diced and lightly cooked Granny Smith or other baking apples to the mixture and pour into the prepared pan. bake until done.


    When I get home I’ll have a look for the recipe for a Swedish cake I used to make which has layers of applesauce, cake or bread crumbs and redcurrant jelly. It’s good way to use up crumbs or stale cake and very tasty.

    This is a salad I make with apples. I’ve often added grilled chicken breast. Salad consists of:

    Greens of choice (I use romaine or spring mix)

    Two apples, sliced thin (I like Honeycrisp for this)

    Candied pecans

    Dried cherries or cranberries

    Blue cheese or feta cheese

    Dressing:

    1 T. Dijon mustard

    1 T. maple syrup

    1 tsp. apple cider vinegar

    1/4 cup olive oil

    Salt/pepper, to taste

    And this similar version was in an email today that includes pears…pretty!

    I love an apple compote on yogurt.

    Apples fried in a little butter and spices served with a really good custard. Any fruit with custard LOL. I could swim in the stuff!

    My pear trees are giving at the moment so we're eating a lot of those - today was compote.

    Instead of baked apples, I used to make a baked apple compote - cut up apples(peeled or not)with a little lemon juice, raisins, broken/chopped nuts and a drizzle of honey or maple syrup, cinnamon/apple pie spices optional, baked @ 375F in a shallow pan, stirring occasionally, until apples are nice and soft.

    And when I had a dehydrator, dried apples were my fave treat to make. I always dipped/tossed the apple slices in lemon or lime juice first.

    Honestly my favorite is a crisp raw apple with some thinly sliced sharp cheese. That said I dog sat for my nephew and his wife last weekend which was both of their birthday. I made a apple crisp as their ’cake’ for their return. It was delicious though I forgot to bring oatmeal which I like in a crisp.

    OMG! What about apple babka? I think you'd have to chop and dehydrate the apples to make it work, but mixed with brown sugar and spices and rolled up into the bread? The apple fritter bread is surely a lot easier, but babka would be awesome!

    A Wisconsin native told me that there was a law on the books that mandated serving Apple Pie with (cheddar) cheese. Sounds good to me.


    I would love a large piece of well made apple pie right now!


    I am a true pieface and one of the best apple pies I made was when I was babysitting kids in Maine. We picked green, unripe apples, peeled them and combined them with sugar, cinnamon and maybe a dash of nutmeg — baked into the standard Yankee two crust pie. Absolutely fantastic.

    My family name was ”pieface.” I used to bargain w my siblings — I will let you hold my cat if you will give me you slice of home-made pie. They did.


    My mother used to make the best pies. My siblings could have held me cat any old time they wanted. 🤷‍♀️
