I have had mine both ways and I prefer the "uncentered" one as it gave me a larger prep space, rather than two smaller ones broken up by the stovetop. It is also easier to get to both the fridge and pantry, which are on either side of the island. I wonder if they say it "needs to be centered" it is because they are just taking their idea of aesthetics into consideration and not yours, or how you cook/use your kitchen. Do what works for you!
