The backsplash is the feature so jeep it neutral if you ask me. Match the cabinets or match the grey from the tile. Good luck.

if you want a granite, you could something with that green in it.
maybe not ALL green, but with flecks of it.

plain gray to match the element concrete or quartz or off white to match the background formica

What about a cream caesarstone in order to achieve a solid color vs. granite?

Polished concert counter tops would be beautiful. Since the tile backsplash has a lot going on it needs a non busy counter top

I would go with a stained butcher block or better yet a custom top made from reclaimed lumber.
