How would a 3m high roof affect the overall look of the design?

This is a question for your architect. There may not even be an issue. Why not just ask the architect for a design using "metro tiles"? And why don't you want to use the architect's recommended roofing? Solid metal roofing is most likely a better choice than tiles in a high rain/wind area anyway.

3m high will effect or block lake view which is major attraction to the property.
the property has side view of the lake and going above 1.5m will block the view I believe the initial design take consideration of the lake view.
I may consider metal roofing as the last option.
however my question is can I use metro tiles at 1,5m height?

Nobody on here can possible answer your question better than the combination of your architect and installer. Unlike them, we haven't seen your plans, your building codes, your climate, or the specs on the potential roofing. I myself wouldn't even consider installing roofing contrary to a manufacturer's specification. In addition to risking damage to your property, it will most likely void the roofing warranty and possible even homeowner's insurance. In extreme cases, it may cause severe injury or death to you, your guests, or innocent third parties.
