Soapstone is one of the most durable and unique stones for countertops. Once the stone is installed, the chances of cracking are pretty much none, unless the cabinets are not leveled or it goes under abusive use, such as stepping on the countertops.
Although soapstone is softer then a regular granite and is more susceptible to scratches, you can easily buff the scratches with sandpaper, and once you've done that, simply reapply the mineral oil on that spot.
