What type of reclaimed wood is this? Also can you cut veggies on it?

The countertop is made from salvaged floor joists. It is 100+ year old fir taken out of a house in Philadelphia. You could cut on it, but I always recommend using cutting boards to preserve the appearance of the surface and minimize how often you need to sand it down.
