Get a counter depth fridge, you will be surprised how much bigger your room will feel, I don't see anything really terrible in this space and you are limited if the eating area is the only one. Maybe some nice glass doors fot the upper cabinets, some good track lighting instead of the center one, painting a new color and I think it will look a lot better without breaking the bank.

The current layout is quite efficient.

First make a budget of what you can afford. Two make a list of any changes you want to make. Third measure existing kitchen and placement of existing appliances, put on graph paper. Take is to lowes or Home Depot and their kitchen planner will help you achieve what you want. It should be free. Do some comparison pricing. The more questions you ask the better the outcome.

This is a nice kitchen the way it is. I would move the fridge to the far end and perhaps get a smaller (narrower) one. Put glass splash backs around the counter tops as these will bounce more light into the area.

The kitchen is not bad, but I really like Rahel's H suggestion. Remember that the flow should be: fridge --> sink-- > stove --> table with counter space in between, so you shouldn't have to walk very far between those work stations, and it doesn't matter of the shape of a kitchen. That means that the fridge might stay where it is or be moved like on Rachel's photo, the sink stays where it is and the stove should be moved to the opposite side, close to the dining room, or eventually on the wall where now you have your fridge. You should have some counter space on both sides of the stove. Good luck!
