Cleaning stone?!

How do you clean stone like this if you get something like wine or tomato sauce on this? Is it me or is this a ridiculous idea? But it looks amazing.

First of all the cooking center is designed so that the range is pulled forward so that there is quite a lot of counter space behind the range. Split face stacked stone is no different than any other natural stone that has some texture, the material needs to be sealed. It is frequently used in kitchen applications. Stone cleaner in a spray bottle and a small soft scrubbing brush can take care of any spill, just be sure to reapply sealer if stone cleaner is used.

what about general dust & grime? I love the look but it looks difficult to keep clean

As I said in my previous answer to this question, if the stone is sealed, stone cleaner in a spray bottle and a small soft scrubbing brush will take care of any grime. Be sure to reapply sealer. This can also be done with a spray bottle. If you let the cleaning go a professional stone cleaning service can easily take care of the cleaning.
