When I lived in the cold east, my shower heads were always on an inner wall. I never thought to ask why? Ask the contractor. Talk with people in the neighborhood, ask them.

I live in Massachusetts and have built a home and now renovating another. Reason for plumbing on interior wall is to avoid freezing of your pipes. That wouldn't be an issue for a warmer climate.

Depending on how much room you have... you could actually fur out wall 4 1/2" and create an inside wall on the outside wall... If you can loose that much space it can be done where no one would even know you did it!
