Adding a cabinet surround to the fridge is a good idea. Make it a series of cabinets that break the horizontal plane of the cabinets you have. Also might consider doing the same in the bare wall area to the left of the sink and at the cabinet area opposite the pantry doors (?).

The dark wood plank tile sounds great. I would go more white with a gray undertone on the cabinets. Can lights would be good in the ceiling with undercabinet lighting. I would take out the two level counters at the sink, but some people like to "hide" the kitchen counters from the other open areas. I'm holding out on countertops until the other decisions are made.
