The spaces you have there seems to be a really great ones, lots of light through what windows are there, and a great amounts of floor space. Also, the trim is really great and when it is all fixed up would look spectacular, so my advice would be to keep the trim, and paint it, which would probably save you money. The colour of the trim really would depend on what kind of look you are going for, however, I would think that white would be a safe choice and really accent the rooms nicely, giving them a clean, finished look.
