Can any door be a bypass / sliding door?

I want to replace our dated heavy mirrored 1970's bypass door. It keeps coming off the track and drives me insane both functionally and visually. It's also the first thing you see when you walk into the house unfortunately.

Other than the standard white bypass doors or mirrored doors I see at Home Depot, is there a more design-friendly alternative that doesn't break the bank? Five years ago I requested a quote from Sliding Door Co. and because the opening is 6ft 8in height, they were going to be $7K. Um...for a door that hides cleaning products? No. Something like a Soshi door would look nice but again, affordable (like this

Also, can any door essentially be made into a bypass door? I bet lots of people have this question or we wouldn't all be holding on to our dated ugly sliding closet doors this long...
