How do we select a faucet to compliment kitchen design

We have an old brick 3 story, built 1887, and are remodeling the kitchen, on a budget, of course. Putting in painted inset cabinets, apron Shaw sink, dark wood floors, and using our family Hoosier cabinet. In general we are trying to have our kitchen look like it's always been there. I like the bridge faucets, but think using two handles is inconvenient and am not crazy about cleaning around 4 holes/fixture pieces. My first choice is a wall faucet, but our window is just a few inches above the counter. Any ideas? Any rule of thumb or design principle I should use in making this decision?
