Glass tiles would look nice

i brought home a bunch of them and they have a greenish cast to them

I think stainless may be too flashy, but a simple (monochromatic) glass tile or ceramic subway tile shouldn't, especially in a light color (white or off-white) taken from the countertop.

I'd go basic subway tile. Not stainless - too bachelor.

I like this because the slight curve to the tiles softens the straight lines of the cabinets and hardware and adds some movement. Something different, yet still subtle enough to not compete with the granite.

A simple off-white subway tile would really showcase your beautiful granite.

Your husband may think it's boring, but you can always fix that with accessories with color. However, clashing backsplash and countertops cannot be easily masked. I'm sure he wouldn't want to ruin the look of those lovely (and pricey!) counters with a backsplash that doesn't match. Goodluck!

The kitchen looks beautiful. A simple backsplash may be boring on its own, but you need to consider the whole finished project. Too many people gild the lily and end up with a god awful mess on their hands. Resist. Use accessories, which can be changed on a whim. Pare down and corral your stuff onto trays so the counter doesn't look so cluttered.

I think the kitchen looks great and I would go with a white or off-white subway tile for the backsplash. I think simple is best since the granite has alot of movement and anything that competed would be to busy.

I am leaning towards a glass subway tile in an off white. Clear or frosted? Should a do a band through it of different, but coordinating colors?
The cow is adorable, goes with my collection. Don't think the vegans in my family would appreciate it though..
I had the matching granite backsplash in my kitchen before the remodel, wanted something different.

Glass tile! Pale blue green. Lighten and open it without being too boring. Accessories are a crutch! Also a soft color will help anchor that countertop and balance the dark wood.

I think any tile will compete with the granite( but I'm no fan of tiles in the kitchen). Anything that consists of small pieces ( tiles, mosaic, etc) will make your kitchen look busy.
With all the ss appliances you can add an ss backsplash just behind your cooktop. Or just waterresistant paint or ( wired) glass.
Let your granite be the highlight of your kitchen.

Maybe try a turquoise hand made ceramic subway shown below or even go for glass.

Those are pretty but I think subway tiles are over used. You should go with what you like

My sister has very similar cabinets and granite and had the same dilemma. She ended up taking the granite (slab) up the wall.

Your granite is beautiful but has a very strong pattern so let it shine as the focal point and keep the backsplash clean and simple. A nice subway tile in a white to match the granite won't be boring. It will be elegant and timeless. Avoid the urge to include a band or worse a cutesy mosaic over the range. It will be dated and you will tire of it.

I vote for the plain subway tile with no particular design. What you have in the kitchen now needs simplicity and no decorative competition. Just an opinion.

Here's a neutral glass subway tile that might bridge the gap between the dark cabinets and light background go granite. But I agree an off white or creamy subway tile would look fab too.

Check out a stone material called Botticino mable. It's a lighter beige w/ a nice grey undertone. I have installed this same material in my profile picture - steam shower.
Another desin suggestion for a back-splash would be a pinwheel. It uses two sizes (4x4 and 6x6) and gives a cobblestone look.

We would suggest you go with a subway tile in glass - perhaps in a parchment color.
