What lighting would you recommend for this space?

This is what I have in the kitchen now. The fluorescent frames with no plexiglass (Ewwww) but I'm updating the kitchen and don't know whether to keep the recessed boxes or just fill them in and put something else in. Then that becomes the next question. What to put in!

I would keep one and put two pendant lights to soften this room up

Raise the ceiling in the center of the room and as much as possible in the entire room.
Install small recessed can lights every 5 feet in both directions.

Yup, ditch those florescent boxes! Install 6 inch recessed directly above the counter top edge with a Cree LED lamp that is dimmable.

Do you have a way / place you could put LED lighting?
Under the cabinets?
Above the cabinets?
Can you put in some sort of crown moulding?
I'll have to give you a picture tonight of mine.
